It’s an unwritten rule of our holidays that we do a cookery course. As well as learning about the region’s cuisine it’s also a good way of getting to know the people.
The instructors could usually do the teaching but on autopilot and they often like to chat about local, customs, politics etc.

There’s some big hitters in the hospitality industry lining up here on the Vietnam Coast. The big names Six Senses, Four Seasons and Aman are giving Vietnam their blessing.
In some ways this is a very different Vietnam to the one I saw when I backpacked my way round the country as penniless student.
I may not have had the luxury spas and 5 * suites but the scenery was still stunning.
It would be nice to return and do the country in Six Senses style.
Vietnam is a long way from the UK and it’s well worth the effort. Someone once told me that it has a longer coastline than California. I also like the fusion of French and Vietnamese cuisine. Two nations that really know what they’re doing when it comes to food.
