  1. Another classic to emerge out of New Orleans Louisiana kitchen is Cajun blackened fish.

    I called in on New Orleans way back in the 1980s and came across the recipe that really seemed quite revolutionary in those days.

  3. Addis Ababa wouldn’t have sprung to the fore of my mind as a great foodie destination, probably because I’ve never been there.

    I can see where you’re coming from as it’s a destination where the local cuisine has retained its authenticity without being too influenced by western intervention.

  4. Talk to a chef and ask them which cuisine they admire the most and I bet that a majority of them will say Japanese. I’ve even spoken to two chefs who funded their own gap years to work their way round Japanese kitchens. Of course, it’s not only Tokyo that interests them, they’ll study food throughout Japan.

  5. Another great addition to that list would be Colombo, Sri Lanka. It has a rich history that spans over 2500 years and it was under the occupation of 3 European powers and its just a few miles from India. All those factors combined makes it a great place to enjoy a wide variety of food. From Naans, rottis and vegetarian delights from the Tamil communities, Authentic Dutch lamprais, Rice and curry delights made in Sri Lankan style to host of other delicacies around the world including Chinese, Japanese, Mexican and a whole lot more. If you’re a foodie then Colombo is a must visit.
